Ingredients
  

  • 6 pipli leaves washed and chopped
  • 1/2 lemon juiced
  • 1 teaspoon brown sugar
  • 2-3 cloves of garlic crushed
  • 1 teaspoon mustard seeds
  • ½ teaspoon fenugreek seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon black peppercorns
  • 2 Green chillies
  • 3 small onion or ¼ red onion finely chopped optional
  • 1/2 teaspoon turmeric powder
  • 1 tablespoon ghee or oil
  • Salt to taste
  • A few curry leaves
  • Water 1 Litre

Instructions
 

  • Prepare Pipli Leaves Paste:
  • In a mortar and pestle or a grinder, grind together pipli leaves with a couple of teaspoon of water to a fine paste
  • Prepare garlic and spices paste:
  • In a mortar and pestle crush the garlic cloves, cumin seeds, and black peppercorns to a coarse paste.
  • Make Rasam:
  • Heat ghee or oil in a pan. Add mustard seeds and let them splutter.
  • Add fenugreek seeds after mustard seeds splutter
  • Add green chillies, onion and curry leaves. Sauté till onion is cooked
  • Now, add the pipli leaves paste and sauté for a minute.
  • Add 1 litre of water and salt to taste, Mix well
  • Add the Garlic and spices paste , Mix well.
  • Bring it to a gentle boil. Let the rasam simmer on low heat for about 5 minutes
  • Add Lemon juice and sugar, mix well and boil for 2 minutes to allow the flavors to meld together
  • Final Touch:
  • Once the rasam is done, garnish with fresh coriander leaves.
  • Serve:
  • Serve hot Pipli Leaves Rasam as a comforting soup or as an accompaniment to steamed rice.
