Pipli leaf zing rasam

Ingredients
- 6 pipli leaves washed and chopped
- 1/2 lemon juiced
- 1 teaspoon brown sugar
- 2-3 cloves of garlic crushed
- 1 teaspoon mustard seeds
- ½ teaspoon fenugreek seeds
- 1 teaspoon cumin seeds
- 1 teaspoon black peppercorns
- 2 Green chillies
- 3 small onion or ¼ red onion finely chopped optional
- 1/2 teaspoon turmeric powder
- 1 tablespoon ghee or oil
- Salt to taste
- A few curry leaves
- Water 1 Litre
Instructions
- Prepare Pipli Leaves Paste:
- In a mortar and pestle or a grinder, grind together pipli leaves with a couple of teaspoon of water to a fine paste
- Prepare garlic and spices paste:
- In a mortar and pestle crush the garlic cloves, cumin seeds, and black peppercorns to a coarse paste.
- Make Rasam:
- Heat ghee or oil in a pan. Add mustard seeds and let them splutter.
- Add fenugreek seeds after mustard seeds splutter
- Add green chillies, onion and curry leaves. Sauté till onion is cooked
- Now, add the pipli leaves paste and sauté for a minute.
- Add 1 litre of water and salt to taste, Mix well
- Add the Garlic and spices paste , Mix well.
- Bring it to a gentle boil. Let the rasam simmer on low heat for about 5 minutes
- Add Lemon juice and sugar, mix well and boil for 2 minutes to allow the flavors to meld together
- Final Touch:
- Once the rasam is done, garnish with fresh coriander leaves.
- Serve:
- Serve hot Pipli Leaves Rasam as a comforting soup or as an accompaniment to steamed rice.
