Ingredients
  

For Marination

  • 500 grams of chicken or mutton cut into pieces
  • 1 cup of thick yogurt
  • 2 tablespoons of ginger-garlic paste
  • 1 teaspoon of turmeric powder
  • 2 teaspoons of red chili powder
  • Salt to taste

For Rice:

  • 2 cups of Basmati rice soaked for 30 minutes
  • 4 cups of water
  • 1 teaspoon of ghee
  • Salt to taste

For Biryani Masala:

  • 2 onions thinly sliced
  • 4 tomatoes chopped
  • 2 green chilies slit lengthwise
  • 1 tablespoon of ginger-garlic paste
  • 1/2 cup of chopped mint leaves
  • 1/2 cup of chopped coriander leaves
  • 1/4 cup of fried onions for garnish
  • 1/4 cup of ghee
  • 1/4 cup of oil
  • A pinch of saffron strands soaked in 2 tablespoons of warm milk

Whole Spices:

  • 2 bay leaves
  • 4 green cardamoms
  • 4 cloves
  • 2- inch cinnamon stick
  • 1 star anise
  • 1 teaspoon of shahi jeera black cumin seeds

Instructions
 

Marinating the Meat:

  • In a large bowl, combine the chicken or mutton pieces with yogurt, ginger-garlic paste, turmeric powder, red chili powder, and salt. Mix well to ensure the meat is evenly coated. Marinate for at least 2 hours, preferably overnight, in the refrigerator.

Cooking the Rice:

  • In a large pot, bring water to a boil. Add salt and ghee.
  • Drain the soaked Basmati rice and add it to the boiling water. Cook until the rice is 70% done. Drain and set aside.

Preparing the Biryani Masala:

  • Heat ghee and oil in a heavy-bottomed pan or pressure cooker.
  • Add the whole spices – bay leaves, green cardamoms, cloves, cinnamon stick, star anise, and shahi jeera. Sauté until fragrant.
  • Add the thinly sliced onions and sauté until golden brown.
  • Stir in the ginger-garlic paste and green chilies. Cook until the raw smell disappears.
  • Add the chopped tomatoes and cook until they turn soft and mushy.
  • Add the marinated meat along with any remaining marinade. Cook on medium heat until the meat is tender and the masala thickens.
  • Sprinkle chopped mint leaves and coriander leaves. Mix well.

Layering the Biryani:

  • In a heavy-bottomed pot or biryani handi, spread a layer of cooked rice at the bottom.
  • Top it with a layer of the cooked meat masala.
  • Repeat the layers until all the rice and meat masala are used up.
  • Drizzle the saffron-infused milk over the top layer.
  • Garnish with fried onions and chopped mint leaves.

Dum Cooking:

  • Cover the pot with a tight-fitting lid or seal with aluminum foil.
  • Place the pot on a tawa (griddle) and cook on low heat for about 20-25 minutes. This process helps infuse the flavors and aromas into the biryani.

Serve Hot:

  • Once done, gently fluff up the biryani with a fork, ensuring the layers remain intact.
  • Serve hot with raita, salad, and a squeeze of lemon juice on the side.
